I would like to know if it is feasible to use the pixy for outdoor color/object avoidance. I assume the colors that you train it to detect may be hard to track because of light changes.

Pixy can handle most lighting changes without a problem. If the lighting temperature changes (going from sunlight to fluorescent light, for example), Pixy will need to either have the white balance reset or retrained under the new lighting conditions. Using Pixy outdoors should be fine.
