is it possible to have a visual or audio output on detection of a certain color on tags of stock moving through gates ?

Yes, this would be possible, although it would be difficult with Pixy alone. Probably the easiest way to accomplish this is interface Pixy with Arduino, then use an Arduino shield that does the audio output for you (or visual, depending on what you were thinking).
